How to make Nigerian stew?

Nigerian stew is one of the most versatile side dishes, it is normally cooked with fish, chicken, turkey, goat meat, and so on. It is easy to make, and the ingredients are found at any store. This stew is eaten with rice, plantain, beans, yam, and swallows. You can feel free to make a large quantity and store it in the freezer for weeks or months.

Ingredients

  • Tomatoes

  • 1 pack of chicken drumsticks

  • 2 Onions

  • 1 Red bell pepper

  • 3 Habanero peppers

  • Ginger

  • Garlic

  • Tomato paste

  • Oil

  • ¼ Grounded crayfish

Seasonings you need.

  • Salt

  • Thyme

  • Knorr or Maggi cubes.

  • Garlic powder

  • Onion powder

You can adjust the number of ingredients you want in the stew especially the peppers. Habanero pepper is spicier than red bell pepper so you can reduce it if you do not want much pepper.

How to make it

It is best to start with Chicken or beef to make the stock.

  • Season the Chicken/Beef with salt, Knorr, garlic powder. Another alternative is an all-purpose seasoning. Get the second onion, chop it into small pieces then put half in the Chicken to cook with it.

  • Pour 1 cup of water depending on the amount you are making and boil in medium heat.

  • Let it boil for 30 mins and keep the stock.

You can either fry the Chicken or leave it steamed, either way, is fine.

While the Chicken/Beef is cooking, start to put the ingredients together.

  • Chop 1 onion (in big pieces), red bell pepper, tomatoes habanero peppers, garlic, ginger, and blend it all together.

  • After blending the ingredients, pour the fresh tomato blend into a pot and start cooking in medium heat to remove excess water. This should take about 20-30 mins.

  • Get a different pot or pan and pour cooking oil to fry. Add the other half onion you chopped to the oil and when it is fried (not brown), put the tomato paste and fry with the onions. Do this for 1- 2 minutes because you do not want to burn it.

  • Pour the tomato blend in the oil and start frying, do this until it loses its sour taste.

  • For the seasoning part, use the grounded crayfish, the chicken stock, and add more flavor if needed (do not add the chicken yet). After tasting the stew and thinks it tastes fine, cover it for 3 mins to cook.

  • Now that the stew is ready, add the Chicken drumstick to cook with it and cover it for another 3 minutes.

You can serve the stew with rice and plantain. I hope you had fun making it. Enjoy!!
